The Olive Grove
In order to grow, He just needs air, sun and “my time”. I entrusted my life with him knowing it’s no waste and He showed his thankfulness and gave me back his olive oil.
Our olive grove spans 75000 acres at 6 to 12 hundred feet asl. More than 12000 olive trees, from the frantoio, leccino and coratina cultivar, are grown according to organic farming protocols. Fertigation is applied to the olive groves and pruning is performed yearly.
Olive harvest starts from mid October by “brucatura” ( the branches are manually combed with a rake) supported by compressed air helpers. Olives are then stored in ventilated boxes and they are further processed within a mandatory lapse of four hours. Processing is continuous to protect and enhance the quality of the product.
