Noteworthy facts
Caciocavallo was first known in XVI century. Early in XX century was prepared in Pupa (Baby) shaped molds ; the last examples of that time can be found today in a workshop in Matera, witnessing the ancient tradition of the production of this cheese in our land.

Matching foods and wines
Aglianico del Vulture a dry, tasty , well balanced , red wine, the flavor get more velvety with seasoning. For egg pasta stuffing, smoked salami and dried fruit.
