Typology
Soft curd cheese made from goat milk. Two typologies are produced normal and molded, 10 or 20 days matured. They show a cylindrical shape (natural) or square (molded), from 1 to 2 lb.
Noteworthy facts
Pilaccio is an ancient spring within the farm since the early XIX century, place for drinking and refreshing in the hottest season, both for herds and shepherds. Now the spring is shadowed by olive orchards, somehow protecting the ancient heart of the farm.

Match with well structured red wine, but also sparkling. With jam and vegetables.
