Hard curd cheese made of goat milk. Enjoyable fresh or matured up to a year.
Born as a summer product during the migration, with shortage of sheep milk and only goats still lactating still supplying cheese making. This allowed an excellent cheese during the warm season.
Matching foods and wines
Match with middle bodied soft red wines with a rich bouquet, dry and balanced in flavor but also with white sparkling wines. For cooking match with dried or fresh pasta, pasta salad, walnut honey or red berries.
