Hard curd cheese made of goat milk. maturing lasts 6 to 12 months.
Production area includes all southern Italy, but only some municipalities in the lucano hinterland, like Pomarico, hold the most interesting goat herds, pasturing sun scotched gullies rich of honeysuckle (leguminous plants with plenty nutritive and healthy properties for goat feeding).
