Perhaps one of the oldest in the Italian cheese making tradition, it was already well known in the 4th century B.C.. Enotrians, a shepherds and farmers people, processed milk in typical rush baskets. The source area includes several municipalities among them Pomarico and Ferrandina (MT) where Azienda Agricola Cavalli is located and other marginal inshore areas (hinterland lucano)

Match with fresh or dried fruit, pears, figs, grape and walnuts. Well bodied white wines, dry and well balanced in flavor or well structured red wines. Seasoned , grated on homemade pastas or for vegetables gratin.
